Farming is Jim’s third career, but his background in classic French cuisine and banking only contributes to his success on his 5-acre fruit and vegetable plot. He delights in reintroducing old and obscure varieties of produce: Bulgarian carrot chili peppers, jelly melons, Mandoria cucumbers and bull’s blood beets are names that roll off the tongue and onto the fork – and Jim gladly shares how to cook each one!
